ZITTI PUTTANESCA
Makes 6 Servings
- 1 pound Ziti Pasta
- 2 ounces sweet butter
- 1/2 cup chopped onions
- 2 tablespoons chopped garlic
- 2 cups tomatoes concasse (Peeled and diced tomatoes)
- 2 tablespoons capers
- 4 anchovy chopped very fine
- 1 teaspoon chopped rosemary
- 1 teaspoon chopped thyme
- 1 cup chicken stock
- 2 tablespoons chopped parsley
- Salt and pepper to taste
Cook the pasta according to the manufacturer direction.
In a sauce pan, add the onion and cook until translucent. Add the garlic and when fragrant add the tomatoes, capers, anchovy, and rosemary. Add the chicken stock and let reduce for a couple minutes. Add more butter and chopped parsley. Adjust seasoning with salt & pepper.
